Griddled Salsa Chicken
Griddled Salsa Chicken
Ingredient:
4 boneless chicken breasts - skin on
3 tablespoons olive oil
Salt and pepper
For the cucumber and tomato salsa :
1 red onion - finely chopped
2 tomatoes - deseeded and diced
1 cucumber - finely diced
1 red chilli - finely chopped
1 small handful of coriander leaves - chopped
Juice of 1 lime
Method:
1. Remove the skin from the chicken breasts. Using kitchen scissors, cut each breast in half lengthways but without cutting the whole way through. Open each breast out flat.
2. Brush with the oil and season well with salt pepper.
3. Heat a griddle pan until very hot.
4. Add the chicken breasts and cook for 3 minutes on each side until cooked through and grill-marked.
5. Meanwhile, to make the salsa, mix together the onion, tomatoes, cucumber, red chilli, coriander and lime juice. Season well with salt and pepper.
Serve the chicken hot with the spicy salsa spooned over and around.
